Blossom’s favourite loaf

Always in my freezer, I love this loaf.  So filling, and easy to make, you don’t need as much of it as you think.  It doesn’t taste or rise like traditional bread, but that doesn’t mean it isn’t tasty!


  • 30g good quality olive oil
  • 180g ground almonds
  • 2 tbsp coconut flour or oatbran
  • 50g ground seeds (flax or mixed)
  • 200g approx. of grated courgette *
  • 2 tbsp whole chia seeds
  • 1.5 tsp baking powder
  • 3 medium eggs
  • 1 tbsp raw apple cider vinegar

* can be swapped for apple or carrot, if carrot add 2 tbsp water too


  1. Heat the oven to 170 / 150 fan. Line a small loaf tin with baking paper.
  2. Combine all the ingredients. Mix really well.
  3. Pour into the loaf tin and bake for 40—45 minutes.
  4. Leave to cool in the loaf tin before slicing.

That is it!  So simple.

Chia seeds  1 of the few complete sources of non-meat essential amino acids.  Packed full of protein & fibre, as well as manganese, magnesium, calcium & phosphorous.   When soaked these tiny seeds swell up and form a gel that can be useful in binding vegan baking, (replacing the need for an egg).
